Crazy Day

Well it been a crazy day around here, starting to think maybe its just our normal - had more snow over night and all water buckets are froze solid - twenty trips or so with hot water did the trick and the Farrier just pulled into the driveway (Hmmmmmm) Half hour later Little Philly can go dancing now. Now what should we have for dinner, Welllllll this was believe it or not quick and also very yummy


Chicken and Rice in one skillet
1 pound skinless, boneless chicken breasts, cut into cubes
1 3/4 cups  Chicken Broth
1/2 teaspoon dried basil leaves, crushed
1/2 teaspoon garlic powder
3/4 cup uncooked regular long-grain white rice
1 package (16 ounces) frozen vegetable combination (broccoli, cauliflower, carrots)
  • Cook the chicken in a 10-inch nonstick skillet over medium-high heat until it's well browned, stirring often. Remove the chicken from the skillet.
  • Stir the stock, basil and garlic powder in the skillet and heat to a boil. Stir in the rice. Reduce the heat to low. Cover and cook for 5 minutes.
  • Stir in the vegetables. Return the chicken to the skillet. Cover and cook for 15 minutes or until the chicken is cooked through and the rice is tender.

Time to bake some bread - Amish Bread

Difficulty: Easy

Servings: 2 Loaves

Cook Time: 30 minutes
Ingredients
2 cups warm water
2/3 cup granulated sugar
2 packets yeast (not instant)
1 1/2 teaspoons salt
1/4 cup vegetable oil
5 1/2 cups unbleached flour

Directions
In large glass bowl dissolve sugar in the warm water and stir in yeast. Allow to sit about 5-10 minutes. Add salt and oil to the yeast. Add flour 1 cup at a time. When dough can formed a ball, knead on a lightly floured surface until smooth not sticky about 10 minutes.

Place dough in bowl and turn to coat surface of dough with the oil. Cover with a damp cloth or plastic wrap in a warm area. Allow to rise until it has doubled in bulk.

Knead dough lightly and divide in half. Shape into loaves and place into two oiled 9 x 5-inch loaf pans. Allow to rise for another 30 minutes.

Preheat oven for 5 minutes at 350 degrees F, and bake for 30 minutes or until top is golden brown.

Let bread sit for at least 15-30 minutes after it comes out of oven Turn bread out on board.
Thats it!! Enjoy, great bread for sandwiches or enjoy warm with melted butter
